Carols Chicken Curry

It is a very mild fruity curry.
Serves 4


  • 225g (8oz) carrots
  • 225g (8oz) onions
  • 1 clove garlic
  • 225g (8oz) eating apples
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1 tablespoon mild curry powder
  • 2 tablespoons turmeric
  • 450g (1lb) diced chicken
  • 25g (1oz) plain flour
  • 600ml (1 pint) water
  • 2 tablespoons mango chutney


Start by peeling the carrots, and dicing them into small pieces. Peel the onions, and roughly chop. Follow by peeling the garlic and finely chopping. Peel and core the apples. Next cut them into quarters and dice. Place them into the lemon juice to ensure they don't go brown.

Place the onions in a saucepan with olive oil, cook on a moderate heat until soft. Add the garlic, carrot, curry powder and turmeric, and cook for a further 10 minutes or until the carrots are soft. Add the chicken, stir all the ingredients together and cook for a further 5 minutes to seal the chicken. Mix the flour and water together until smooth, then sieve into the mixture. Stir together well, then cover and cook for a further 30-35 minutes.

During the last 10 minutes of cooking, add the apples and mango chutney to the chicken mixture and mix. Serve with rice and naan bread.
